- 1 c. frozen chopped onions
- 2 tsp. salt (optional)
- 1 (15 oz.) can black beans, rinsed and drained
- 1 (16 oz.) can pinto beans, rinsed and drained
- 1 (28 oz.) can petite diced tomatoes
- 3 (14 1/2 oz.) cans vegetable broth or use chicken broth
- 1 (15 oz.) can Fiesta corn, drained
- 1 (15 oz.) can tomato sauce
- 1 (15 oz.) can diced new potatoes, drained
- 1 c. frozen green beans
Method
- Mix together in 4-quart or larger crock-pot. Cover and cook on high for 6 hours or until vegetables are tender.
