Ingredients
- 2 (8.5 oz.) pkg. corn muffin mix
- 1 (8 oz.) can cream-style corn
- 2 large eggs
- 1/2 c. plain nonfat yogurt
- 1/2 c. (2 oz.) shredded reduced fat Cheddar cheese
- 1/4 to 1/2 c. milk
Method
- Combine all ingredients in a bowl; stir just until moistened. Pour into a lightly greased 13 x 9 x 2-inch pan.
- Bake at 400° for 17 to 20 minutes or until golden.
- Yield:
- 15 servings.
