- 8 chicken breasts
- 2 (16 oz.) pkg. frozen broccoli
- 2 cans cream of chicken soup
- 1/2 c. mayonnaise
- 1/3 c. evaporated milk
- 1/2 tsp. lemon juice
- 1 c. grated Cheddar cheese
- 2 c. bread crumbs
- 1/2 c. melted margarine
- 1/2 tsp. curry powder
Method
- Cook chicken; let cool.
- Remove meat from bone and cut into bite-size pieces.
- Spray 9 x 13-inch pan with cooking spray. Layer chicken in pan.
- Cook broccoli until tender.
- Drain and layer over chicken.
- Combine soup, mayonnaise, milk, lemon juice and curry powder, blending until a smooth sauce is made.
- Pour over broccoli.
- Sprinkle with cheese.
- Toss bread crumbs with melted margarine and place on top of cheese.
- Bake at 350° for 30 minutes.
