Ingredients

  • 8 chicken breasts
  • 2 (16 oz.) pkg. frozen broccoli
  • 2 cans cream of chicken soup
  • 1/2 c. mayonnaise
  • 1/3 c. evaporated milk
  • 1/2 tsp. lemon juice
  • 1 c. grated Cheddar cheese
  • 2 c. bread crumbs
  • 1/2 c. melted margarine
  • 1/2 tsp. curry powder

Method

  • Cook chicken; let cool.
  • Remove meat from bone and cut into bite-size pieces.
  • Spray 9 x 13-inch pan with cooking spray. Layer chicken in pan.
  • Cook broccoli until tender.
  • Drain and layer over chicken.
  • Combine soup, mayonnaise, milk, lemon juice and curry powder, blending until a smooth sauce is made.
  • Pour over broccoli.
  • Sprinkle with cheese.
  • Toss bread crumbs with melted margarine and place on top of cheese.
  • Bake at 350° for 30 minutes.
