Ingredients
- 1 -2 tablespoon olive oil
- 1 small chopped onion
- 2 teaspoons minced garlic
- 2 -3 chopped carrots
- 1 -2 cup chopped cabbage
- 3 -4 cups fresh spinach
- 12 cup barley
- 1 (15 ounce) can chicken broth
- 1 (15 ounce) can diced tomatoes
- 1 -2 teaspoon oregano
- 1 -2 teaspoon cumin
- 1 -2 teaspoon chives
Method
- Saute onion, garlic, and carrots in oil with seasonings in large soup pot.
- Add cabbage.
- When vegetables are slightly softened, add diced tomatoes, broth, barley, and tomato sauce.
- Add fresh spinach.
- Bring to a boil and simmer until barley is done (about 40 min).
