Ingredients

  • 1 -2 tablespoon olive oil
  • 1 small chopped onion
  • 2 teaspoons minced garlic
  • 2 -3 chopped carrots
  • 1 -2 cup chopped cabbage
  • 3 -4 cups fresh spinach
  • 12 cup barley
  • 1 (15 ounce) can chicken broth
  • 1 (15 ounce) can diced tomatoes
  • 1 -2 teaspoon oregano
  • 1 -2 teaspoon cumin
  • 1 -2 teaspoon chives

Method

  • Saute onion, garlic, and carrots in oil with seasonings in large soup pot.
  • Add cabbage.
  • When vegetables are slightly softened, add diced tomatoes, broth, barley, and tomato sauce.
  • Add fresh spinach.
  • Bring to a boil and simmer until barley is done (about 40 min).
