Ingredients

  • 2 eggs
  • 1/3 cup sugar
  • 1 tsp. salt
  • 2 tbsp. melted margarine
  • cooking oil
  • 1-2/3 cup all-purpose flour
  • 3 tsp. baking powder
  • 1/3 cup milk
  • 1/4 tsp. lemon extract
  • 1/4 tsp. nutmeg

Method

  • Beat eggs until light; add sugar, salt, oil, extract, and nutmeg and mix well.
  • Mix flour with baking powder; add alternatively with milk to egg mixture.
  • Drop by 1/2 teaspoonsful into deep hot oil and fry approximately 2-1/2 minutes, or until brown.
  • Doughnuts will rise to the surface, so continue submerging them to assure even cooking.
  • Drain on paper towels.
  • Shake with sugar in a bag.
