Ingredients
- 2 eggs
- 1/3 cup sugar
- 1 tsp. salt
- 2 tbsp. melted margarine
- cooking oil
- 1-2/3 cup all-purpose flour
- 3 tsp. baking powder
- 1/3 cup milk
- 1/4 tsp. lemon extract
- 1/4 tsp. nutmeg
Method
- Beat eggs until light; add sugar, salt, oil, extract, and nutmeg and mix well.
- Mix flour with baking powder; add alternatively with milk to egg mixture.
- Drop by 1/2 teaspoonsful into deep hot oil and fry approximately 2-1/2 minutes, or until brown.
- Doughnuts will rise to the surface, so continue submerging them to assure even cooking.
- Drain on paper towels.
- Shake with sugar in a bag.
