Ingredients
- 6 large (baked) sweet potatoes
- 6 tbsp. apple juice
- 1/2 c. squeeze parkay margarine
- 2 tbsp. packed brown sugar
- 1/2 tsp. ginger
- Coco mallow topping
Method
- Slice potatoes in lengthwise. Scoop out center. Leaving 1/8 inch shell. Mash potatoes; add apple juice, margarine, brown sugar, and ginger. Beat until fluffy. Top with coco mallow topping. Bake at 350°F 20 -25 minutes.
