- 6-10 red skinned new potatoes
- 1 stick butter
- 1 lg. can or possibly pkg. green beans, liquid removed
- Salt
- Pepper
- Parsley flakes
- Chopped dry onion
- 1 lg. container lowfat sour cream
- Parmesan cheese
Method
- Wash and scrub potatoes (don't peel).
- Boil in a large pan of water till tender and then drain.
- Cut potatoes into large sections.
- Place half of the potatoes in a crock pot.
- Season with salt, pepper, parsley, onion and Parmesan.
- Cut 1/2 stick of butter into pats and place on top of potatoes.
- Pour green beans on top of potatoes.
- Season lightly with salt and pepper.
- Put the rest of the potatoes on top and season again with all seasonings.
- Add in the other 1/2 stick butter cut into pats and Parmesan cheese.
- Spread the lowfat sour cream proportionately on top.
- Lightly shake Parmesan on top till it covers the lowfat sour cream.
- Heat in crock pot on High for 1 1/2 to 2 hrs or possibly till very warm.
- Stir after about 1 hour.
