Ingredients

  • 6-10 red skinned new potatoes
  • 1 stick butter
  • 1 lg. can or possibly pkg. green beans, liquid removed
  • Salt
  • Pepper
  • Parsley flakes
  • Chopped dry onion
  • 1 lg. container lowfat sour cream
  • Parmesan cheese

Method

  • Wash and scrub potatoes (don't peel).
  • Boil in a large pan of water till tender and then drain.
  • Cut potatoes into large sections.
  • Place half of the potatoes in a crock pot.
  • Season with salt, pepper, parsley, onion and Parmesan.
  • Cut 1/2 stick of butter into pats and place on top of potatoes.
  • Pour green beans on top of potatoes.
  • Season lightly with salt and pepper.
  • Put the rest of the potatoes on top and season again with all seasonings.
  • Add in the other 1/2 stick butter cut into pats and Parmesan cheese.
  • Spread the lowfat sour cream proportionately on top.
  • Lightly shake Parmesan on top till it covers the lowfat sour cream.
  • Heat in crock pot on High for 1 1/2 to 2 hrs or possibly till very warm.
  • Stir after about 1 hour.
