Ingredients
- 2/3 c. sugar
- 1 env. gelatin
- 1/8 teaspoon salt
- 2 egg whites
- 1 1/4 c. water
- 1/4 c. lemon juice
- 1 teaspoon lemon rind, grated
Method
- LEMON SNOW: Combine sugar, gelatin and salt in saucepan.
- Add in water, stir till gel is dissolved 3 to 6 min.
- Remove from heat.
- Stir in lemon juice and rind.
- Pour in bowl and refrigeratetill thick.
- Beat till light and fluffy then beat 2 egg whites stiff.
- Add in gel to whites and beat till mix holds shape.
- CUSTARD SAUCE: Scald lowfat milk in boiler, beat egg yolks slightly, add in sugar, salt, add in to lowfat milk.
- Pour back in boiler and cook till custard coats a spoon.
- Add in vanilla.
- Cold and chill.
