Ingredients

  • 2/3 c. sugar
  • 1 env. gelatin
  • 1/8 teaspoon salt
  • 2 egg whites
  • 1 1/4 c. water
  • 1/4 c. lemon juice
  • 1 teaspoon lemon rind, grated

Method

  • LEMON SNOW: Combine sugar, gelatin and salt in saucepan.
  • Add in water, stir till gel is dissolved 3 to 6 min.
  • Remove from heat.
  • Stir in lemon juice and rind.
  • Pour in bowl and refrigeratetill thick.
  • Beat till light and fluffy then beat 2 egg whites stiff.
  • Add in gel to whites and beat till mix holds shape.
  • CUSTARD SAUCE: Scald lowfat milk in boiler, beat egg yolks slightly, add in sugar, salt, add in to lowfat milk.
  • Pour back in boiler and cook till custard coats a spoon.
  • Add in vanilla.
  • Cold and chill.
