Ingredients

  • 1 head of lettuce, (Iceberg) very cool and dry bite size pcs
  • Olives, ripe, liquid removed and chilled
  • Pimento, liquid removed and slivered
  • Garbanzo beans, liquid removed and chilled
  • Genovese salami, cut in slivers
  • Mozzarella cheese, diced
  • Romano cheese, grated
  • Marinated artichoke hearts, chilled
  • Italian peppers, mild pickled (Pepperoncini) liquid removed
  • Celery hearts and tops, minced and cut very fine

Method

  • Arrange bed of lettuce greens in chilled salad bowl and top with above ingredients (excluding dressing).
  • Bring it to the table untossed to show off the colorful arrangement.
  • Add in salt, pepper and vinegar and toss lightly.
  • Add in oil and toss again.
  • This can be served as a first course salad or possibly even as a main dish.
  • Serve with warm crusty bread.
