- 1/2 head cabbage
- 3 green onions
- 8 ounces canned tomatoes
- 1 green pepper
- 3 celery ribs
- 1/2 tablespoon Lipton Onion Soup Mix
- 3 carrots
- 4 ounces mushrooms
- 1/4 cup soft tofu
- 24 ounces low-sodium V8 juice
- 1 tablespoon lemon juice
- 1/2 tablespoon lime juice
Method
- Saute onions in the pot.
- Cut veggies and saute harder veggies.
- Put rest of veggies in the pot and add rest of ingredients. Bring to a boil and add soup mix. Gradually reduce heat to simmer and leave until vegetables are tender. Add seasoning and pepper to taste.
