Ingredients

  • 1/2 head cabbage
  • 3 green onions
  • 8 ounces canned tomatoes
  • 1 green pepper
  • 3 celery ribs
  • 1/2 tablespoon Lipton Onion Soup Mix
  • 3 carrots
  • 4 ounces mushrooms
  • 1/4 cup soft tofu
  • 24 ounces low-sodium V8 juice
  • 1 tablespoon lemon juice
  • 1/2 tablespoon lime juice

Method

  • Saute onions in the pot.
  • Cut veggies and saute harder veggies.
  • Put rest of veggies in the pot and add rest of ingredients. Bring to a boil and add soup mix. Gradually reduce heat to simmer and leave until vegetables are tender. Add seasoning and pepper to taste.
