Ingredients
- 6 to 7 Tbsp. cornstarch
- 1 1/4 c. sugar
- 2 c. water
- 3 egg yolks
- 1 Tbsp. oleo
- 1/4 tsp. salt
- 1 Tbsp. lemon rind
- 1/4 to 1/3 c. lemon juice
Method
- Mix sugar and cornstarch in saucepan.
- Blend boiling water into it gradually; then return to heat and cool slowly, stirring constantly until mixture begins to boil and thicken.
- Cook a few minutes, stirring constantly.
- (Can be cooked in the microwave.) Set aside to cool.
