Ingredients
- 6 large leaves romaine lettuce
- 6 large leaves endive
- 1 small onion, finely chopped
- 1/4 c. Feta or low-fat Mozzarella cheese, minced*
- 1 large tomato, chopped
- 4 medium carrots, sliced or chopped
- 1 boiled egg, chopped
- salt to taste
- 2 Tbsp. olive oil
Method
- Gently tear lettuce leaves into bite-size chunks.
- Toss ingredients together to make an evenly homogenized salad.
- Pour olive oil lightly over ingredients.
- Salt to taste; chill and serve at room temperature.
