Ingredients
- 1/2 c. flour
- 1/2 c. milk
- 2 eggs, lightly beaten
- pinch of nutmeg
- 1/2 c. butter or margarine
- 2 Tbsp. confectioners sugar
- juice of 1/2 lemon
Method
- Preheat oven to 425°.
- In a mixing bowl, combine flour, milk, eggs and nutmeg.
- Beat lightly, leaving batter a little
- lumpy. Melt butter in a 12-inch skillet with a heatproof handle.
- When very hot, pour in batter.
- Bake in oven 15 to 20 minutes or until golden brown.
- Sprinkle with sugar and return briefly to oven. Sprinkle with lemon juice.
- Serve with jelly or jam as a dessert or breakfast.
- Serves 4 to 6.
