Ingredients

  • 1/2 c. flour
  • 1/2 c. milk
  • 2 eggs, lightly beaten
  • pinch of nutmeg
  • 1/2 c. butter or margarine
  • 2 Tbsp. confectioners sugar
  • juice of 1/2 lemon

Method

  • Preheat oven to 425°.
  • In a mixing bowl, combine flour, milk, eggs and nutmeg.
  • Beat lightly, leaving batter a little
  • lumpy. Melt butter in a 12-inch skillet with a heatproof handle.
  • When very hot, pour in batter.
  • Bake in oven 15 to 20 minutes or until golden brown.
  • Sprinkle with sugar and return briefly to oven. Sprinkle with lemon juice.
  • Serve with jelly or jam as a dessert or breakfast.
  • Serves 4 to 6.
