Ingredients

  • 5 each shallots thinly sliced
  • 4 each garlic cloves minced
  • 2 medium carrots sliced into 1/4 inch pieces
  • 13 cup ham baked, chopped
  • 1 slice orange zest
  • 1 each bay leaves
  • 3 pounds beef chuck sliced into 1 1/2 inch cubes
  • 1/4 cup flour, all-purpose
  • 1/4 teaspoon black peppercorns whole
  • 1/4 teaspoon thyme dry
  • 18 teaspoon cloves ground
  • 1/2 teaspoon sage dry
  • 2 tablespoons balsamic vinegar
  • 3/4 cup white wine dry
  • 1/4 cup brandy
  • 2 tablespoons flour, all-purpose
  • 2 tablespoons margarine
  • 1 x salt
  • 1 x parsley leaves chopped

Method

  • In slow cooker, combine shallots, garlic, carrots, ham, orange peel, and bay leaf.
  • Coat beef cubes with flour, add to cooker.
  • Sprinkle with peppercorns, thyme, cloves, and sage.
  • Drizzle with vinegar; pour in wine and brandy.
  • Cover.
  • cook LOW until beef is very tender.
  • Remove and discard bay leaf and orange peel, then blend in flour and butter (Blend together).
  • Increase cooker heat to HIGH, cover and cook, stirring 2 to 3 times, until sauce is thickened, about 20 minutes.
  • Season to taste and sprinkle with parsley.
