- 6 slices cooked bacon
- 1/2 c. olive oil
- 1/2 c. peanut oil
- 1/2 c. red wine vinegar
- 1 tsp. sugar
- 1 tsp. dry mustard
- 1 tsp. ground fennel
- 2 Tbsp. lemon juice
- 1 tsp. bacon drippings
Method
- Heat over double boiler.
- Blend oils and vinegar.
- Add sugar, mustard and fennel.
- Stir and add bacon drippings.
- Blend in lemon juice, parsley and salt and pepper to taste.
- Pour over spinach leaves.
- Top with Parmesan cheese.
