Ingredients

  • 1 head lettuce, rinsed, drained and chilled
  • 1 pt. dandelion greens, rinsed, drained and chilled
  • 4 small onions
  • 1/2 green pepper
  • 1/3 lb. Swiss cheese
  • 3 Tbsp. olive oil
  • 4 tsp. vinegar
  • 2 medium tomatoes, cut into quarters
  • 2 hard-boiled eggs, sliced
  • salt and pepper to taste

Method

  • Cut lettuce, greens, onions, green pepper and Swiss cheese into small pieces.
  • Sprinkle with salt and pepper, tossing lightly.
  • Add olive oil and vinegar, toss lightly.
  • Gently mix in the tomatoes and eggs or leave on top.
