Ingredients

  • 3 large tomatoes
  • 1 clove garlic
  • 2 Tbsp. lemon juice
  • 4 Tbsp. chopped parsley
  • 3 Tbsp. chopped chives
  • 1/2 c. olive oil
  • 1 chopped green pepper
  • 2 chopped onions
  • 1 large cucumber, peeled, seeded, diced
  • salt and pepper
  • dash of Tabasco
  • croutons
  • 2 1/2 c. tomato juice

Method

  • Combine tomatoes, garlic, lemon juice, parsley, chives, tomato juice and olive oil.
  • Puree in an electric blender.
  • Add green peppers, onions and cucumber.
  • Season to taste with salt, pepper and Tabasco.
  • Chill thoroughly.
  • Serve with small bowls of croutons, chives, onions, peppers and cucumbers for garnishing.
