Method

  • Method for Dal/ Lentil curry In a pressure cooker add 2 tsp of oil and once its heated add Cumin seeds once they are light brown then add Hing or Asafoetida ,curry leaves, green chillies and onion and saute until Onions are translucent. then add tomatoes and cook for 2 min then add turmeric soaked Dal ,Aamchur ,salt and water and close the lid and let it cook and wait until 1 whistle then off the stove . Wait for 10 min open the lid and see that the Dal should not become mushy and should retain the shape . Now Dal is ready.
  • Method for Pakwan / Wheat crispies In a bowl take Maida, Atta, Ajwain, Salt, Red chilly Powder, Ghee or Oil and mix it well add water to make a nice smooth Dough. The Dough should neither be too soft or too hard. Let the dough rest for 15 to 20 min. Now divide the dough into small lime size balls and roll them out or press them in a Tortilla press and prick it with the fork so that when we fry they won't puff up. Meanwhile heat the oil to deep fry these Pakwans . once the oil is hot reduce the flame to medium heat and deep fry the Rolled out crispies till nice light golden . Serve hot with Dal. Sprinkle the dal with some Red Chilly powder and chopped Onions before serving.
