Ingredients
- 16 boiled artichoke hearts, fresh or canned
- 4 eggs
- 6 Tbsp. olive oil
- 1 c. bread crumbs
- 1 Tbsp. chopped parsley
- 1 pinch oregano
- 1 pinch dry basil
- 1 pinch garlic powder
- salt and pepper to taste
Method
- Sprinkle hearts with salt, garlic powder and pepper.
- Mix parsley, oregano and basil with bread crumb mixture.
- Beat eggs slightly.
- Dip hearts in egg and roll in bread crumb mixture.
- Fry in hot oil, about 3 minutes, on each side or until golden brown. Serves 6 to 8.
