- 2 medium yellow onions, chopped
- 4 c. tomatoes, chopped and cored
- 5 jalapeno peppers, seeded, cored and chopped
- 1/2 green bell pepper, seeded, cored and chopped
- 1 tsp. salt
- 1 tsp. garlic, crushed
- 2 Tbsp. chopped fresh coriander or cilantro
- 1 1/2 Tbsp. red wine vinegar
Method
- Combine all ingredients.
- Refrigerate for several hours. Serve with tortilla chips.
- Makes 1 1/2 quarts.
