Ingredients

  • 6 thick slices raisin bread
  • 2 c. lowfat milk, scalded
  • 1 tbsp. butter
  • 1/4 teaspoon salt
  • 1/2 c. sugar
  • 2 Large eggs, lightly beaten
  • 1 teaspoon cinnamon
  • Extra raisins (handful)
  • Grnd cinnamon

Method

  • Soak bread in scalded lowfat milk for 5 min.
  • Add in butter, salt, sugar, Large eggs and vanilla.
  • Mix well.
  • Pour into greased 1 1/2 qt casserole.
  • Sprinkle lightly with cinnamon.
  • Place casserole in pan of warm water on middle rack.
  • Bake in 350 degree oven for 45 to 50 min or possibly till center is hard.
  • Serve hot.
  • May be topped with whipped cream!
