Ingredients

  • 12 oz. cooked shrimp, peeled and deveined
  • 2 Tbsp. cooking oil
  • 1 c. chopped onion
  • 1 bell pepper, chopped
  • 1 stalk celery, sliced
  • 1 clove garlic, minced
  • 1 16 oz. can tomatoes, cut up, undrained
  • 1/2 c. slivered almonds
  • 1/2 c. raisins
  • 1/4 c. chili sauce
  • 1 tsp. lemon juice
  • 1/2 tsp. salt
  • 1/2 tsp. bottled hot pepper sauce
  • 1/4 tsp. curry powder
  • 1/4 tsp. thyme
  • hot cooked rice

Method

  • Heat oil in skillet.
  • Cook the onion, pepper, celery and garlic.
  • Add undrained tomatoes, almonds, raisins, chili sauce, lemon juice, salt, hot pepper sauce, curry powder and thyme. Bring to a boil, reduce heat.
  • Cover and simmer for 30 minutes. Add shrimp, cover and simmer for 5 minutes.
  • Serve over rice. Serves 4.
