- 12 oz. cooked shrimp, peeled and deveined
- 2 Tbsp. cooking oil
- 1 c. chopped onion
- 1 bell pepper, chopped
- 1 stalk celery, sliced
- 1 clove garlic, minced
- 1 16 oz. can tomatoes, cut up, undrained
- 1/2 c. slivered almonds
- 1/2 c. raisins
- 1/4 c. chili sauce
- 1 tsp. lemon juice
- 1/2 tsp. salt
- 1/2 tsp. bottled hot pepper sauce
- 1/4 tsp. curry powder
- 1/4 tsp. thyme
- hot cooked rice
Method
- Heat oil in skillet.
- Cook the onion, pepper, celery and garlic.
- Add undrained tomatoes, almonds, raisins, chili sauce, lemon juice, salt, hot pepper sauce, curry powder and thyme. Bring to a boil, reduce heat.
- Cover and simmer for 30 minutes. Add shrimp, cover and simmer for 5 minutes.
- Serve over rice. Serves 4.
