Ingredients

  • 1 pound chicken breasts
  • 8 ounces Rice-A-Roni chicken flavor
  • 1/2 teaspoon curry powder
  • 1/2 cup italian salad dressing
  • 2 tablespoons orange marmalade
  • 1/2 cup raisins
  • onion 1 med.
  • 4 carrots

Method

  • Saute chicken breasts in chicken broth until done, dice into small pieces.
  • Prepare Rice-a-Roni according to package instructions, add curry powder with flavor packet.
  • Combine salad dressing, orange marmalade and raisins; let stand 10 minutes.
  • Grate carrots in food processor until very fine, adding onion to grate too.
  • Mix carrot mixture with diced chicken and cooked Rice-a-Roni.
  • Add and mix salad dressing.
  • Serve warm or cold.
