Ingredients

  • 1 Tablespoon Olive Oil
  • 3 cloves Garlic, Minced
  • 1 White Onion, Diced
  • 1 Medium Golden Beet, Peeled And Cut Into Thin Slices (1 Should Yield About 2 Cups)
  • 3 cups Swish Chard (remove White Parts)
  • 2 cups Vegetable Stock
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Curry Powder
  • 1/2 teaspoons Cumin
  • 1/2 teaspoons Ground Sea Salt
  • 1 package (17 Oz. Size) Gnocchi

Method

  • Heat a large skillet over medium-high heat.
  • Add olive oil to pan and swirl to coat.
  • Add garlic and cook for 1 minute, being careful not to burn.
  • Add onion and cook 1 minute, stirring as it cooks.
  • Add beets and cook for 3 minutes.
  • Add Swiss chard, vegetable stock, and all spices.
  • Cover and reduce heat to medium.
  • Simmer about 8-9 minutes or until beets are tender.
  • Add gnocchi to mixture, cover and simmer for 3-4 minutes.
  • Remove from heat and serve.
