Ingredients

  • 5 lb. bittersweet chocolate, melted
  • 3/4 c. butter, melted
  • 1 c. egg yolks
  • 1 1/2 Tbsp. instant coffee
  • 1/2 c. cherry brandy or Bailey's Irish Cream
  • 1 c. egg whites
  • pinch of salt
  • 1/2 c. powdered sugar
  • 1 1/2 pt. whipping cream

Method

  • First melt the chocolate.
  • In a bowl mix the butter, egg yolks and instant coffee.
  • In another bowl, mix cherry brandy or Bailey's Irish Cream, egg whites, salt and powdered sugar.
  • Mix the second bowl into the first bowl, then fold into the melted chocolate.
  • In a cold metal bowl, beat the whipping cream until thick.
  • Mix the whipping cream into the chocolate.
  • Place mixture into a cake tin. Chill for a day before serving.
  • Yields 2 cakes.
