Ingredients

  • 1 cup long grain rice
  • 1 tablespoon vegetable oil
  • 12 onion, finely chopped
  • 1 chicken bouillon cube
  • 12 teaspoon cumin
  • 1 garlic clove
  • 12 bell pepper, chopped
  • 1 jalapeno, chopped (optional)
  • 1 tomatoes, chopped
  • salt and pepper
  • 12 cup fresh cilantro, chopped

Method

  • Brown rice in oil for three minutes.
  • Add chicken broth and bring to a boil.
  • Add onion, bell pepper, jalapeno, and tomato.
  • Add bullion cube, salt, pepper, cumin, cilantro and garlic.
  • Boil.
  • Cover and reduce heat to low.
  • Cook 20 minutes.
