Ingredients
- 1/2 c. cornmeal
- 1/4 c. flour
- 2 Tbsp. Parmesan cheese
- 1 1/2 tsp. Italian seasoning
- 1/4 tsp. garlic powder
- 1/4 tsp. pepper
- 2 1/2 to 3 lb. chicken, cut up and skinned or use boneless
- 1/2 c. skim milk
- 3 Tbsp. margarine, melted
Method
- Heat oven to 400°.
- Combine dry ingredients. Dip chicken into milk.
- Coat with cornmeal mixture.
- Place in pan; brush with margarine. Bake 40 to 45 minutes (less for boneless) or until golden brown and tender.
- Makes 5 servings.
