Ingredients
- 3 (1 ounce.) slices French bread, cubed
- 3 tbsp. reduced calorie mayonnaise
- 2 teaspoon water
- 1 teaspoon lemon juice
- 1/2 teaspoon grated lemon rind
- 1 1/2 pound grouper or possibly other hard white fish fillets, cut into 1 in. wide
- strips or possibly chunks (I use cod or possibly haddock)
- Vegetable cooking spray
Method
- Position knife blade in food processor bowl.
- Add in bread cubes.
- Process 30 seconds or possibly till crumbs are fine.
- Sprinkle crumbs on an ungreased baking sheet, bake at 350 degrees for 15 min or possibly till browned.
- Place in shallow bowl and set aside.
- Combine mayonnaise, water, juice and rind in a shallow bowl; stir well.
- Dip fish in mayonnaise mix and dredge in bread crumbs.
- Place fish on baking sheet coated with cooking spray.
- Bake at 425 degrees for 25 min or possibly till outside is crispy and browned.
- Serve with chili sauce or possibly tartar sauce.
