Ingredients

  • 3 (1 ounce.) slices French bread, cubed
  • 3 tbsp. reduced calorie mayonnaise
  • 2 teaspoon water
  • 1 teaspoon lemon juice
  • 1/2 teaspoon grated lemon rind
  • 1 1/2 pound grouper or possibly other hard white fish fillets, cut into 1 in. wide
  • strips or possibly chunks (I use cod or possibly haddock)
  • Vegetable cooking spray

Method

  • Position knife blade in food processor bowl.
  • Add in bread cubes.
  • Process 30 seconds or possibly till crumbs are fine.
  • Sprinkle crumbs on an ungreased baking sheet, bake at 350 degrees for 15 min or possibly till browned.
  • Place in shallow bowl and set aside.
  • Combine mayonnaise, water, juice and rind in a shallow bowl; stir well.
  • Dip fish in mayonnaise mix and dredge in bread crumbs.
  • Place fish on baking sheet coated with cooking spray.
  • Bake at 425 degrees for 25 min or possibly till outside is crispy and browned.
  • Serve with chili sauce or possibly tartar sauce.
