Ingredients

  • 2 lb. baking potatoes, scrubbed
  • 1 tsp. olive or vegetable oil
  • 1 large garlic clove, minced
  • 1 tsp. salt
  • 1/4 tsp. black pepper

Method

  • Preheat the oven to 450°.
  • Line jelly roll pan with foil. Spray with vegetable cooking spray. Cut potatoes into 1/2-inch wide slices.
  • Toss potatoes with oil, garlic, salt and pepper to coat well. Bake 40 to 45 minutes, tossing once or twice, until potatoes are crisp and golden.
  • Makes 4 servings.
