Ingredients
- 2 lb. baking potatoes, scrubbed
- 1 tsp. olive or vegetable oil
- 1 large garlic clove, minced
- 1 tsp. salt
- 1/4 tsp. black pepper
Method
- Preheat the oven to 450°.
- Line jelly roll pan with foil. Spray with vegetable cooking spray. Cut potatoes into 1/2-inch wide slices.
- Toss potatoes with oil, garlic, salt and pepper to coat well. Bake 40 to 45 minutes, tossing once or twice, until potatoes are crisp and golden.
- Makes 4 servings.
