Ingredients
- 3 eggs
- 3/4 c. milk
- 2 Tbsp. sugar
- 1/2 tsp. salt
- 6 Tbsp. flour (cheat 1/2 c.)
Method
- Beat eggs without separating.
- Mix sugar, salt and flour well together and stir quickly into eggs.
- Add milk and beat hard. Pour just enough butter to cover bottom of lightly greased pan when tilted and swirled.
- Shake crepe over until slightly brown on bottom and firm to touch on top (dull look).
- Do not turn over. Put aside to cool.
