Ingredients

  • 3 eggs
  • 3/4 c. milk
  • 2 Tbsp. sugar
  • 1/2 tsp. salt
  • 6 Tbsp. flour (cheat 1/2 c.)

Method

  • Beat eggs without separating.
  • Mix sugar, salt and flour well together and stir quickly into eggs.
  • Add milk and beat hard. Pour just enough butter to cover bottom of lightly greased pan when tilted and swirled.
  • Shake crepe over until slightly brown on bottom and firm to touch on top (dull look).
  • Do not turn over. Put aside to cool.
