- 1/4 lb. bacon, chopped
- 1 medium onion, sliced
- 1 small green pepper, cleaned and chopped
- 2 tsp. seafood seasoning blend
- 1 large clove garlic, minced
- 1/4 tsp. crushed red pepper
- 1 large can stewed tomatoes and juice
- 1/4 c. tomato paste
- 1 c. hot water
- 3/4 lb. fresh okra, chopped
- 1 lb. medium shrimp, shelled and deveined
- 3 c. cooked rice (1 c. uncooked)
Method
- Combine bacon, onion, green pepper, garlic, seafood seasoning and red pepper.
- Cover with plastic wrap; cook in a microwave-safe dish for 5 minutes, stirring once after 3 minutes.
- Stir in tomatoes with juice, tomato paste and water.
- Cover; heat in microwave on High for 8 minutes.
- Add okra; stir in and heat for 5 minutes.
- Add shrimp.
- Cover; let stand.
- Serve with rice.
- Makes 4 servings.
