Ingredients

  • 1/4 lb. bacon, chopped
  • 1 medium onion, sliced
  • 1 small green pepper, cleaned and chopped
  • 2 tsp. seafood seasoning blend
  • 1 large clove garlic, minced
  • 1/4 tsp. crushed red pepper
  • 1 large can stewed tomatoes and juice
  • 1/4 c. tomato paste
  • 1 c. hot water
  • 3/4 lb. fresh okra, chopped
  • 1 lb. medium shrimp, shelled and deveined
  • 3 c. cooked rice (1 c. uncooked)

Method

  • Combine bacon, onion, green pepper, garlic, seafood seasoning and red pepper.
  • Cover with plastic wrap; cook in a microwave-safe dish for 5 minutes, stirring once after 3 minutes.
  • Stir in tomatoes with juice, tomato paste and water.
  • Cover; heat in microwave on High for 8 minutes.
  • Add okra; stir in and heat for 5 minutes.
  • Add shrimp.
  • Cover; let stand.
  • Serve with rice.
  • Makes 4 servings.
