Ingredients

  • 1 pound cheese tortellini
  • 1/2 c. minced onion
  • 3 garlic cloves, mined
  • 2 tbsp. extra virgin olive oil
  • 1 c. seeded, cubed tomato
  • 9 ounce. pkg. frzn minced spinach
  • 1/4 c. minced fresh basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 c. whipping cream
  • 1/4 c. grated Parmesan or possibly Romano cheese

Method

  • Cook tortellini as directed on package.
  • Drain; rinse with warm water.
  • Meanwhile, in large skillet over medium heat cook onion and garlic in oil till lightly browned, about 5 min.
  • Add in spinach, tomato, basil, salt and pepper; cook 5 min, stirring occasionally.
  • Stir in cream and cheese; cook till mix just comes to a boil.
  • Reduce heat to low.
  • Add in tortellini; mix well.
  • Cook 4 or possibly 5 min more.
  • Serve with additional cheese.
  • 4 servings.
