- 1 pound cheese tortellini
- 1/2 c. minced onion
- 3 garlic cloves, mined
- 2 tbsp. extra virgin olive oil
- 1 c. seeded, cubed tomato
- 9 ounce. pkg. frzn minced spinach
- 1/4 c. minced fresh basil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 c. whipping cream
- 1/4 c. grated Parmesan or possibly Romano cheese
Method
- Cook tortellini as directed on package.
- Drain; rinse with warm water.
- Meanwhile, in large skillet over medium heat cook onion and garlic in oil till lightly browned, about 5 min.
- Add in spinach, tomato, basil, salt and pepper; cook 5 min, stirring occasionally.
- Stir in cream and cheese; cook till mix just comes to a boil.
- Reduce heat to low.
- Add in tortellini; mix well.
- Cook 4 or possibly 5 min more.
- Serve with additional cheese.
- 4 servings.
