Ingredients

  • 3/4 stick margarine
  • 1 small onion, chopped
  • 1/2 green pepper, chopped
  • 1 c. rice (not Minute rice)
  • 3 chicken bouillon cubes
  • 2 c. boiling water
  • 1 can cream of mushroom soup
  • 1 cut-up seasoned chicken pieces

Method

  • Melt margarine in a 9 x 11-inch baking dish.
  • Put 3 bouillon cubes in boiling water (works better if you crushed them in a baggie first); add to melted butter in pan.
  • Add chopped onion and pepper; add rice and then blend in the soup.
  • Put seasoned chicken pieces on top and bake at 325° for 1 hour or until chicken is done.
