Ingredients

  • 6 large potatoes
  • 2 c. fat-free sour cream
  • 2 c. nonfat Cheddar cheese, grated
  • 1/4 c. diced onions
  • 6 Tbsp. skim milk
  • 1/2 tsp. salt (optional)
  • 1/4 tsp. pepper

Method

  • Boil potatoes until tender.
  • Remove from hot water, drain and cool slightly.
  • Peel potatoes and slice very thin.
  • Set aside. Combine sour cream, cheese, onion, milk, salt and pepper.
  • Mix potatoes with sauce mixture.
  • Spoon into a 9 x 13-inch glass casserole dish, sprayed with nonfat cooking spray.
  • Bake at 300° for 30 minutes, or until bubbly.
  • Serves 12.
  • Each serving contains 149 calories and 0.2 fat grams.
