Ingredients
- 6 large potatoes
- 2 c. fat-free sour cream
- 2 c. nonfat Cheddar cheese, grated
- 1/4 c. diced onions
- 6 Tbsp. skim milk
- 1/2 tsp. salt (optional)
- 1/4 tsp. pepper
Method
- Boil potatoes until tender.
- Remove from hot water, drain and cool slightly.
- Peel potatoes and slice very thin.
- Set aside. Combine sour cream, cheese, onion, milk, salt and pepper.
- Mix potatoes with sauce mixture.
- Spoon into a 9 x 13-inch glass casserole dish, sprayed with nonfat cooking spray.
- Bake at 300° for 30 minutes, or until bubbly.
- Serves 12.
- Each serving contains 149 calories and 0.2 fat grams.
