Ingredients

  • 4 c. milk
  • 1/4 tsp. salt
  • 1/2 c. rice (long grain)
  • 1/2 c. raisins
  • 1 tsp. vanilla
  • 1 tsp. nutmeg
  • 1 c. cream
  • 2 eggs, well beaten
  • 1/2 c. sugar

Method

  • Put milk and salt into a saucepan and when warmed, add rice. Bring to a quick boil and then allow to simmer for 15 minutes. Stir occasionally.
  • Add the raisins and let it all simmer for 5 minutes longer.
  • Stir in 1/4 cup of the cream and simmer for 3 more minutes, stirring constantly.
  • Combine the frothy beaten eggs in a mixing bowl with the sugar, vanilla and rest of the cream. Blend well and stir in a tablespoon of the hot rice mixture.
  • Dump the contents of the mixing bowl into the saucepan and simmer until it thickens.
  • Serve cold.
