Ingredients
- 4 c. milk
- 1/4 tsp. salt
- 1/2 c. rice (long grain)
- 1/2 c. raisins
- 1 tsp. vanilla
- 1 tsp. nutmeg
- 1 c. cream
- 2 eggs, well beaten
- 1/2 c. sugar
Method
- Put milk and salt into a saucepan and when warmed, add rice. Bring to a quick boil and then allow to simmer for 15 minutes. Stir occasionally.
- Add the raisins and let it all simmer for 5 minutes longer.
- Stir in 1/4 cup of the cream and simmer for 3 more minutes, stirring constantly.
- Combine the frothy beaten eggs in a mixing bowl with the sugar, vanilla and rest of the cream. Blend well and stir in a tablespoon of the hot rice mixture.
- Dump the contents of the mixing bowl into the saucepan and simmer until it thickens.
- Serve cold.
