Ingredients
- 1 c. Carolina rice
- 7 c. whole milk (reserve 1 c.)
- 1/2 tsp. salt
- 1 Tbsp. butter
- 4 eggs, separated
- 1 c. sugar
- 1 Tbsp. vanilla
Method
- Boil rice, 6 cups milk, salt and butter together for approximately 25 minutes or until rice is tender.
- In blender, place egg yolks, 1 cup sugar and 1 cup milk.
- Add this blended mixture to cooked rice mixture and return to a full, rolling boil. Place in dish and add vanilla.
- Fold in meringue from egg whites. Sprinkle with cinnamon.
