Ingredients

  • 1 c. Carolina rice
  • 7 c. whole milk (reserve 1 c.)
  • 1/2 tsp. salt
  • 1 Tbsp. butter
  • 4 eggs, separated
  • 1 c. sugar
  • 1 Tbsp. vanilla

Method

  • Boil rice, 6 cups milk, salt and butter together for approximately 25 minutes or until rice is tender.
  • In blender, place egg yolks, 1 cup sugar and 1 cup milk.
  • Add this blended mixture to cooked rice mixture and return to a full, rolling boil. Place in dish and add vanilla.
  • Fold in meringue from egg whites. Sprinkle with cinnamon.
