Ingredients

  • 2 pkg. lime Jell-O
  • 1 c. evaporated milk (undiluted)
  • 1 small can crushed pineapple, undrained
  • 1 Tbsp. lemon juice
  • 1 c. creamed cottage cheese
  • 1/2 c. pecans, finely chopped
  • 1/2 c. celery, finely chopped
  • 1/2 c. mayonnaise

Method

  • Dissolve Jell-O in 1 cup boiling water.
  • Cool slightly, then add milk.
  • Chill mixture until very thick, but not set. Then stir in pineapple, lemon juice, cottage cheese, pecans, celery and mayonnaise.
  • Mix well and pour into casserole dish.
  • Refrigerate until well congealed.
