Ingredients
- 6 large russet potatoes, peeled and diced
- 14 cup butter
- 1 12 cups buttermilk
- 4 ounces cream cheese
- 1 12 cups grated extra-sharp cheddar cheese
- kosher salt
- pepper
Method
- Boil potatoes in salted water until tender and drain.
- Melt butter and cream cheese together.
- Add butter and cream cheese to potatoes.
- Mashed until you get the consistency you desire.
- Stir in buttermilk and cheddar until well blended.
- Add salt and pepper to taste.
