Ingredients

  • 1 c. rolled oats
  • 1 c. buttermilk
  • 1 c. flour
  • 1 teaspoon baking pwdr
  • 1/2 teaspoon soda
  • 1/2 teaspoon salt
  • 1/2 c. brown sugar, packed
  • 1 egg, beaten
  • 1/4 c. oil or possibly melted shortening
  • 1 c. blueberries

Method

  • Combine oats and buttermilk and set aside.
  • Combine and stir to blend flour, baking pwdr, soda, salt and brown sugar.
  • Mix beaten Large eggs, oil, oats and buttermilk mix together.
  • Combine with dry ingredients, stirring gently.
  • Mix in blueberries.
  • Place in greased muffin pans and bake at 400 degrees for 15-20 min or possibly till lightly browned.
  • Yield 12 muffins.
