Ingredients

  • 6 acorn squash
  • 14 cup water
  • 1 lb fresh cranberries
  • 2 granny smith apples
  • 1 cup sugar
  • 2 tablespoons lemon juice
  • 34 cup fresh squeezed orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon lemon zest
  • 12 cup chopped pecans

Method

  • Preheat oven to 375.
  • Place squash cut side down in baking pan with 1/4c water in the pan.
  • Bake for 45min until just tender.
  • Combine stuffing ingredients and distribute evenly among squash halves.
  • Return to oven and bake an additional 15min.
