Ingredients
- 1/4 cup quinoa
- 1/2 cup water
- 1/2 cup whole kernal corn
- 2 cup steamed kale - stems removed
Method
- Combine your water, quinoa, and corn and bring to a boil.
- Reduce heat to simmer until quinoa is done, about 15 or 20 minutes.
- May have to add a touch more water.
- Take your kale and steam for 5 minutes.
- I use my rice cooker with the steamer basket.
- Combine everything and add salt and pepper to taste.
