Ingredients

  • 4 oz. cream cheese (low-fat)
  • 1 Tbsp. milk
  • 1 Tbsp. Equal (1 1/2 pkg.)
  • 1 1/2 c. lite Cool Whip
  • 1 graham cracker crust (use recipe on box; substitute Sweet 'N Low for sugar)
  • 1 c. skim milk
  • 2 (4 serving size) pkg. sugar-free vanilla Jell-O instant pudding
  • 1 can pumpkin
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/4 tsp. cloves

Method

  • Mix cream cheese, 1 tablespoon milk and Equal until smooth. Stir in whipped topping and spread on crust.
  • Pour 1 cup milk into bowl; add pudding mix and beat with mixer until blended (1 to 2 minutes).
  • Stir in pumpkin and spices and mix well.
  • Spread over cheese layer.
  • Refrigerate 3 hours.
  • Garnish with Cool Whip.
