Ingredients
- 4 oz. cream cheese (low-fat)
- 1 Tbsp. milk
- 1 Tbsp. Equal (1 1/2 pkg.)
- 1 1/2 c. lite Cool Whip
- 1 graham cracker crust (use recipe on box; substitute Sweet 'N Low for sugar)
- 1 c. skim milk
- 2 (4 serving size) pkg. sugar-free vanilla Jell-O instant pudding
- 1 can pumpkin
- 1 tsp. cinnamon
- 1/2 tsp. ginger
- 1/4 tsp. cloves
Method
- Mix cream cheese, 1 tablespoon milk and Equal until smooth. Stir in whipped topping and spread on crust.
- Pour 1 cup milk into bowl; add pudding mix and beat with mixer until blended (1 to 2 minutes).
- Stir in pumpkin and spices and mix well.
- Spread over cheese layer.
- Refrigerate 3 hours.
- Garnish with Cool Whip.
