Ingredients

  • 1 2/3 tablespoons yeast
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 1 1/4 cups warm water
  • 4 cups flour
  • olive oil
  • 1 package feta diced
  • 1 red onion medium sized chunks
  • 3 sprigs rosemary

Method

  • In mixer bowl, mix with a fork the yeast, salt, sugar, and half of the water.
  • Add the flour and knead for 7 to 9 minutes to get a good soft dough. Add more water if needed.
  • Cover with plastic wrap, and let rise for 30 minutes, or until it doubles in size.
  • Spread the dough on a floured surface into a rectangle 2 1/2 centimeters thick. Place on a baking sheet line with parchment paper.
  • Pour 2/3 tablespoon of olive oil on the dough, and spread it with the back of the spoon.
  • Sprinkle the feta cheese, onion and rosemary on top of the dough. Gentle press the toppings into the dough.
  • Let double in volume.
  • Preheat oven to 180 degrees Celsius and bake for about 25 minutes.
  • Serve warm.
