Ingredients
- 2 c. cranberries
- 1/2 c. sugar
- 1/2 c. chopped pecans
- 2 eggs
- 1/4 c. melted shortening
- 1 c. sugar
- 1 c. flour
- 1/2 c. butter or oleo, melted
Method
- Grease well a 10-inch pie plate.
- Spread cranberries over bottom of plate.
- Sprinkle with 1/2 cup sugar and nuts.
- Set aside.
- Beat eggs well.
- Add 1 cup sugar gradually, mixing thoroughly.
- Add flour, melted butter and shortening.
- Beat well. Pour this batter over top of berries.
- Bake in a slow oven at 325° for 60 minutes and crust is golden.
- Cut like pie.
- Serve warm or cold with generous scoops of vanilla ice cream.
