Ingredients
- 2 c. flour
- 3/4 c. sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. soda
- 1/2 tsp. salt
- 2 Tbsp. oil
- grated rind and juice of 1 orange plus water to make 3/4 c.
- 1 egg, beaten
- 1 c. raw cranberries, coarsely chopped
Method
- Heat oven to 350°.
- Grease loaf pan (9 x 5 x 3-inch).
- Blend dry ingredients.
- Mix in oil, orange rind, juice and egg.
- Fold in cranberries.
- Pour into pan.
- Bake 1 hour.
- Cool thoroughly before slicing with a thin, sharp knife.
- Yields 16 servings.
