Ingredients

  • 2 c. whole wheat flour
  • 2 c. white flour
  • 1 Tbsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 c. brown sugar
  • 1 c. white sugar
  • 1/2 c. butter
  • 1 Tbsp. grated orange rind
  • 1 1/2 c. orange juice
  • 2 eggs
  • 2 c. cranberries, coarsely chopped
  • 1 c. chopped nuts
  • 2/3 c. raisins

Method

  • Sift dry ingredients together.
  • Cut in butter until mixture resembles coarse meal.
  • Combine orange rind, orange juice and eggs.
  • Add to dry ingredients and mix just to moisten.
  • Fold in berries, nuts and raisins.
  • Turn into 2 greased and floured 9 x 5-inch loaf pans.
  • Bake in 350° oven for 55 to 60 minutes.
  • Cool. Slices better the next day.
