- 2 c. whole wheat flour
- 2 c. white flour
- 1 Tbsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1 c. brown sugar
- 1 c. white sugar
- 1/2 c. butter
- 1 Tbsp. grated orange rind
- 1 1/2 c. orange juice
- 2 eggs
- 2 c. cranberries, coarsely chopped
- 1 c. chopped nuts
- 2/3 c. raisins
Method
- Sift dry ingredients together.
- Cut in butter until mixture resembles coarse meal.
- Combine orange rind, orange juice and eggs.
- Add to dry ingredients and mix just to moisten.
- Fold in berries, nuts and raisins.
- Turn into 2 greased and floured 9 x 5-inch loaf pans.
- Bake in 350° oven for 55 to 60 minutes.
- Cool. Slices better the next day.
