Ingredients
- 1 green pepper
- 1 large onion
- 2 Tbsp. butter
- 3 c. rice
- chicken breast (without skin or bone, or use your choice of meat)
Method
- Cook rice as directed (preferably Minute rice).
- Set aside. Chop up onion and green pepper.
- In skillet, put chicken, onion and green pepper.
- Cook until chicken is well done.
- Chop up chicken in bite size pieces.
- Mix butter, rice and chicken.
- Cook about 5 minutes, stirring constantly.
- Let stand 5 minutes, then eat.
