Ingredients

  • 2 c. fresh cranberries
  • 1 c. sugar
  • 1 c. water
  • 1/2 c. shortening
  • 2/3 c. sugar
  • 2 eggs
  • 1 3/4 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. baking soda
  • 1 c. mashed banana
  • 1/2 c. chopped walnuts

Method

  • Combine cranberries, 1 cup sugar and water.
  • Cook over medium heat until berries pop (about 5 minutes); drain.
  • Cream shortening and 2/3 cup sugar, beat until light.
  • Add eggs and beat.
  • Combine dry ingredients, creamed mixture and bananas.
  • Mix well.
  • Add cranberries and walnuts.
