Ingredients

  • 1 cup Crisco (If you buy the sticks it is one stick) + 2tbs of water
  • 1 1/3 cup brown sugar, packed
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1.5 cup bread flour (can use all-purpose flour it will less chewy this way)
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 3 cups rolled oats
  • 1 cup chopped pecans
  • 2 tbs orange zest (probably 1-2 oranges worth)
  • 1/3 cup of orange juice (can use the fresh from the oranges you zested OR just use from a bottle)
  • 1.5 cups of craisins or any brand dried cranberry

Method

  • Preheat oven to 350°F (175°C)
  • In a large bowl, cream together the Crisco, water, brown sugar, egg, orange zest, orange juice and vanilla until smooth. In a separate bowl, whisk the flour, baking soda, cinnamon and salt together.
  • Mix the dry into the wet ingredients until well combined. Then stir in the nuts and dried fruit. Bake for 10-12 minutes and cool on a wire rack
