Ingredients

  • 2 c. diced cooked chicken
  • 2 tsp. shortening
  • 1/4 c. chopped onion
  • 1/4 c. chopped green pepper
  • 1/4 c. chopped celery
  • 1/4 c. mushrooms
  • 2 Tbsp. chopped pimento
  • 1 Tbsp. chopped parsley
  • 1 Tbsp. butter
  • 1 Tbsp. flour
  • salt and pepper

Method

  • Melt shortening and fry onion, green pepper and celery until tender.
  • Remove.
  • Melt butter in skillet; add flour until it makes a paste.
  • Add milk gradually, stirring constantly until mixture thickens.
  • Add salt, pepper, chicken, sauteed vegetables, pimento, mushrooms and parsley.
  • Reduce heat and cook additional 5 minutes.
