Ingredients
- 2 c. diced cooked chicken
- 2 tsp. shortening
- 1/4 c. chopped onion
- 1/4 c. chopped green pepper
- 1/4 c. chopped celery
- 1/4 c. mushrooms
- 2 Tbsp. chopped pimento
- 1 Tbsp. chopped parsley
- 1 Tbsp. butter
- 1 Tbsp. flour
- salt and pepper
Method
- Melt shortening and fry onion, green pepper and celery until tender.
- Remove.
- Melt butter in skillet; add flour until it makes a paste.
- Add milk gradually, stirring constantly until mixture thickens.
- Add salt, pepper, chicken, sauteed vegetables, pimento, mushrooms and parsley.
- Reduce heat and cook additional 5 minutes.
